A quick and easy, nourishing vegan meal featuring firm tofu and assorted vegetables sautéed with turmeric and garlic, served in warm pitas with hummus and a homemade mustard tahini sauce.
1. Sautee veggies of choice (such as cherry tomatoes, bell pepper, arugula, and mushrooms) with balsamic vinegar and garlic powder until they are browned.
2. Once the veggies are browned, turn down the heat to medium and add in some firm tofu.
3. Add in coconut aminos, turmeric powder, black pepper, and more garlic powder.
4. Cook for another 5 minutes until the tofu is browned.
5. Warm up pitas of choice.
6. Spread some hummus onto the warm pitas and add in the cooked veggies and tofu mixture.
7. Top with pickled onions and cilantro.
8. For the mustard tahini sauce: mix together a big spoonful of tahini, coconut aminos, dijon mustard, and a tiny splash of water until a smooth sauce forms. Drizzle this sauce over your assembled pitas before serving. Enjoy!
