PB&J Cookie Dough Bars

Cookie dough layer: Add all ingredients (chickpeas, oats, 1/2 cup maple syrup, peanut butter, 3 tsp vanilla extract, cinnamon, salt) into a food processor or blender and blend until dough forms. Press the dough into a loaf pan and put it into the freezer for about an hour.

Raspberry jam layer: Cook all ingredients (frozen raspberries, chia seeds, ground flaxseeds, 3 tbsp maple syrup, splash of vanilla extract) together on the stove until the raspberries cook down. Let the mixture completely cool. Pour the jam mixture on top of the cookie dough layer and put it back into the freezer.

Once everything hardens, slice into bars and enjoy! Optionally, top with some chopped raspberry dark chocolate.
