Lentil Loaf Recipe

Cook lentils like instructed on package. Mix 1 tbsp ground flax with 2 tbsp of water and set aside to create a flax egg. Sauté all the chopped veggies in a medium pan on the stove. Add in tomato paste, minced garlic, rosemary, sage, thyme, salt, and black pepper (to taste) to the sautéed veggies. Wait for the cooked lentils to cool, then add the cooled lentils and sautéed veggies to a bowl. Mix in the flax egg and buckwheat flour. Taste and adjust seasonings as needed. Put the mixture into a loaf pan and cook at 375°F for 20-30 minutes.
