Double Chocolate Cookie Dough Cups

1. Blend all ingredients together in a food processor or blender, reserving the chopped chocolate for later.
2. If the mixture is too dry, add a tiny splash of plant-based milk or maple syrup until it reaches the desired consistency.
3. Melt the reserved chocolate on the stove.
4. Press the cookie dough mixture into lined muffin tins.
5. Pour the melted chocolate on top of each cookie dough cup.
6. Add coconut shreds or any other toppings of your choice.
7. Place the cups in the freezer for 20-30 minutes to set.
8. Enjoy! Store the finished cookie dough cups in the fridge.
