Double Chocolate Cookie Dough Bars

Blend all ingredients (oats, chickpeas, maple syrup, peanut butter, cocoa powder, salt, vanilla extract) together in a food processor or blender until smooth. Press the mixture into a lined 8x8 brownie pan and place it in the freezer. While the base chills, melt the dark chocolate bars and coconut oil in the microwave, stirring every 30 seconds until smooth. Pour the melted chocolate mixture on top of the cookie dough base. Place the pan back in the freezer for 10-15 minutes, or until the chocolate hardens. Once firm, slice into bars and enjoy!
