Chocolate Banana Bread Birthday Cake with Mocha Frosting
25 mins prepServes 10
It’s birthday week, which means cake is on my mind! This chocolate banana bread cake is always a crowd favorite, featuring two layers of moist banana bread and a rich 4-ingredient mocha frosting. It also offers a vegan option.
Preheat your oven to 350 F (175 C).
In a large bowl, mix together all the dry ingredients for the banana bread layers: oat flour, cacao powder, ground coffee, baking soda, baking powder, and salt.
Add the wet ingredients to the dry mixture: mashed ripe bananas, egg (or flax egg), pure maple syrup (or honey), a splash of plant milk, and vanilla extract. Stir until just combined, then fold in the chopped dark chocolate or chocolate chips.
Pour the batter into a cake pan and bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let the cake layer cool completely in the pan before removing.
Repeat this process for a second layer, or as many layers as desired.
While the cake layers are cooling, prepare the mocha frosting: Combine cashew butter, cocoa powder, and ground coffee in a bowl. Gradually add maple syrup, stirring until you reach your desired sweetness and consistency.
Once both cake layers are fully cooled, spread the mocha frosting in between the layers and on top of the cake. Garnish with more chopped dark chocolate if desired. Enjoy!
