These blueberry oat bars came out SO delicious. The perfect little summer snack or dessert or whenever your heart desires. Serve these warmed up with some coconut milk ice cream.
Preheat oven to 350 F. In a large mixing bowl, mix together dry ingredients for the oat base/crumble. Add in the wet ingredients and mix until well combined. It should form a nice dough. If your nut butter isn’t super creamy, you might need to add in 1-2 tbsp of water or plant milk. Get an 8X8 pan and line with parchment paper. Press about 3/4 of the dough into the bottom of the pan. Set aside the rest for the crumble topping. Place in the fridge while you make the jam center.
Put a small saucepan on medium heat and add in all of the jam ingredients. Cook for 2-3 minutes until bubbles start to form. Mash the blueberries and keep stirring for another 2 minutes to prevent burning. Get out the crust and pour the jam on top.
Crumble the leftover dough on top. Bake in the oven for 30-35 minutes until golden. Enjoy!
