This incredibly easy and nourishing black bean falafel taco bowl puts a delicious Mexican spin on classic falafel. It features air-fried black bean falafel, a simple tahini salsa, and your favorite Mexican veggies, avocado, and greens.
For the Air Fried Black Bean Falafel: Soak 3 cups of dried black beans for 6+ hours. Once soaked, add them to a blender or food processor. Roll the mixture into balls. Air fry the falafel for 15 minutes at 400°F (200°C) or bake in an oven at 450°F (230°C) for 25-30 minutes.
For the Tahini Salsa: Mix tahini with your favorite salsa until your desired taste and consistency forms.
To assemble the bowl: Throw the prepared falafel and tahini salsa into a bowl with your favorite Mexican veggies, avocado, and greens. Enjoy!
